With an oceanfront view greeting Chef Gennaro each time he walks into Café Amalfi at The Hilton Myrtle Beach Resort, it’s difficult to not be inspired to create seafood dishes. This popular and tasty menu item allows guests the unique experience of eating a whole crab in an approachable manner.

Ingredients
  • 1 medium soft shell crab
  • 2 thick slices sour dough bread
  • 1/4 avocado sliced
  • 1 leaf radicchio
  • 1 egg beatened
  • 2 oz cornmeal
  • 1 oz flour
  • 4 oz peanut oil
  • Kosher salt to taste
  • White pepper to taste
Directions

Season flour with salt and pepper. Clean crab under cold running water removing the lung, eyes and bottom flap. Dredge crab in seasoned flour dust off extra and then place in egg to coat then corn meal. Heat a heavy sauté pan to medium and add oil. Place crab in hot oil and sear both sides until crispy. Remove and set aside. Grill sour dough. Place radicchio on bread then crab then avocado and top with second slice of sour dough.
